Lipetsk Borscht

A robust beet soup made with cabbage, potatoes, carrots, tomatoes, and beef or pork, then finished with sour cream and fresh dill. Every family has its own variation, making it one of the region’s signature comfort foods. 1)

Don River Fish Ukha

Although the Don River only skirts parts of the region, freshwater fish such as pike, perch, and carp have long inspired a delicate, clear fish soup seasoned with herbs and root vegetables. 2)
